Turkey, Spinach & Parmesan Meatballs

I found this recipe for Turkey Meatballs on Pinterest and immediately wanted to make them!  I love meatballs, but they are often seen as a less then healthy option because of the beef. This one caught my eye and looked delicious.....so I found the perfect excuse to make them! They were as good as they looked if not better, I was delighted with the outcome and hope you are too!



Preheat oven to 400 degrees F. Prepare a large baking sheet by spraying with cooking spray.

In a frying pan, add the olive oil


Then add the onion, garlic and seasonings


Then add the Worcestershire sauce (including the chili paste, if you are adding this). 
Cook on a medium heat until onion is tender (about 5 minutes).


Add spinach to pan and combine with onion mixture.


Cook until the spinach is wilted (about 3 minutes)



Remove from heat and allow to cool to room temperature.

In a large bowl, combine the uncooked turkey, breadcrumbs, cheese and egg. Drain any excess liquid off the spinach mixture and to the meat. Ensure all the ingredients are well mixed together.



Using your hands, create balls of the mixture that are about 2 inches in diameter




 Then place them on the baking sheet leaving space in between the balls.



Bake until your meatballs are cooked thoroughly which was about 30 minutes for my oven. Remove from oven and serve as desired.





Ingredients:

1 teaspoon salt

1 tsp dried oregano
1 tsp basil
1/2 tsp chili paste (optional)
9oz fresh spinach

1 1/4 lbs (1.4 kg) lean ground turkey
1 3/4 cup bread crumbs
1 C grated parmesan cheese
2 large eggs

Made lots of meatballs but never with turkey. Can't wait to try these - but I really want the sandwich version too.
