Bacon & Broccoli Pasta

I found this recipe on Pinterest and decided it would make a great and fast dinner. 

It contains many ingredients that you will already have in the house, so unlike some recipes you will not have to go shopping with a specific grocery list. 

I adapted the original recipe quite substantially and I was delighted with the results.

Here's what you need to do:


Fill a large pan 3/4 full of water and boil.  When the water boils, add the pasta, and reduce heat to medium.

In another pan, add the bacon


Cook on a medium heat for 2 minutes.


Add the mushrooms and cook for a further 5 minutes, stirring occasionally.



Add the frozen peas to the pasta and cook for 2 minutes.


 Add the broccoli.


Add the cream cheese to the bacon and mushrooms



Add the romano, basil, italian seasoning and milk and stir. Reduce heat to low and simmer.




When broccoli is tender to the touch, remove from the heat and drain.


Add the pasta, peas and broccoli to the sauce and stir until combined.

Serve!




Ingredients:
Yield: 2 generous servings



10oz dried pasta - I used rigatoni
8 slices of smoked bacon, chopped
10 mushrooms, chopped
8oz frozen peas
1/2 lb broccoli, cut into florets
4oz low-fat cream cheese
1/4 C grated romano cheese
2 tbsp fresh basil
1 tbsp italian seasoning
1/4 C milk

Directions:

Add the cream cheese to the bacon and mushrooms and stir until the ingredients are thoroughly mixed. Add the romano, basil, italian seasoning and milk and stir. Reduce heat to low and simmer.

When broccoli is tender to the touch, remove from the heat and drain. Add the pasta, peas and broccoli to the sauce and stir until combined.

Serve!
