Easiest Banana Bread in the whole world!

We LOVE Banana Bread and we often get the chance to make it as we regularly buy bananas and let them get beyond their best so they either get thrown out or salvage and made into delicious bread!

We recently purchased a Vitamix.....and I am in love with it! I have wanted one for a while after I saw a couple of friends using them and realized the full extent of their capabilities. I could go on but I will not bore you with the details here.....but I will regularly use them in recipes as they speed up the preparation time enormously.

In the cookbook that accompanied our Vitamix, I found this wonderful recipe for banana bread.  It is the quickest and easiest recipe I have ever used, and it actually takes longer to get out all the ingredients and wash up than it does to make the bread!

Also, this recipe has hardly any fat or sugar in it, and uses whole wheat flour so it is a very healthy alternative to other cakes and breads....and did I mention that it's delicious!!!
I wanted to share it with you as it really is too delicious and needs to be shared with the world!





Preheat oven to 350F.  Spray an 8 1/2 x 4 1/2 loaf pan with cooking spray.

Combine flour, baking powder and salt in a mixing bowl.  Set aside.




Place egg, sugar, butter, milk, bananas and applesauce into the Vitamix in the order listed, and secure the lid (or blend with a food processor/hand mixer)

Select Variable 1, press start and slowly increase speed to variable 5.  Blend for 15 secs or until mixed



Pour wet mixture into dry ingredients, and fold by hand to combine.

Pour batter into prepared loaf tin.

Bake for 45-55 mins, or until a knife inserted into the center comes out clean.




Ingredients


1 2/3 C (200g) Whole Wheat Flour
2 tsp Baking Powder
1 Tsp Salt
1 Large Egg
2/3 C Sugar
1/4 C (130g) Sugar
1/4 C (60g) Butter, softened
1/3 C milk
2 ripe bananas
1/4 C Unsweetened Applesauce
2/3 C (80g) Chopped walnuts or Chocolate chips (optional)

Directions

3) Place egg, sugar, butter, milk, bananas and applesauce into the Vitamix in the order listed, and secure the lid (or blend with a food processor/hand mixer)

4) Select Variable 1, press start and slowly increase speed to variable 5.  Blend for 15 secs or until mixed

5) Pour wet mixture into dry ingredients, and fold by hand to combine.

6) Stir in chocolate chips or walnuts at this stage if so desired.

7) Pour batter into prepared loaf tin.

8) Bake for 45-55 mins, or until a knife inserted into the center comes out clean.
